• Starter: Ruby Citrus & Gold Beet Salad. Baby arugula roasted beet “hearts,” blood orange segments, crumbled feta, pistachios, champagne–honey vinaigrette.
• Main: Seared Sea Scallops with Tarragon–White Wine Pan Sauce, Pommes Anna, and Roasted Broccolini. Dry-packed scallops, quick tarragon beurre blanc-style pan sauce; layered buttered potatoes; broccolini with lemon zest, garlic, and dried currants.
• Dessert: Classic Molten Chocolate Lava Cakes Served with vanilla Chantilly cream and fresh berries.
